  • Good King Henry
  • Iceplant
  • Kuka
  • Lagos bologi
  • Land cress
  • Lettuce – scores of varieties!
  • Lizard’s tail
  • Melokhia
  • Mustard
  • New Zealand Spinach
  • Orache
  • Parsley
  • Radicchio
  • Salad rape
  • Samphire
  • Sea Beet
  • Sea kale

Perhaps half of these may not be available and many of these have various varieties, each of which has different nutritional value. The more variety, the better. At the bottom of the list in value is iceberg lettuce. Skip it in favor of leafy (especially red) or romaine lettuce. And of course add lots of other great salad enhancers, such as cabbage, celery, peppers, artichokes, marigolds, nasturtiums, grapes and other fruits—not to mention nuts and cheeses. Your diet should include at least one great salad a day!
